Abstract

In Malaysia, the pineapple waste either solid or liquid from industrial pineapple cannery still contains sugar and other valuable nutrient. Pineapple waste might have a potential for recycling to produce more useful products. Regarding to the benefits, an experimental was cathed out using homofermentative Lactobacillus delbrueckii in free cell microbial anaerobic fviusentation using solid and liquid pineapple waste to produce lactic acid. Through the experiment, effect of temperature (30C, 40C and 50C) and inoculum size (5% 10% and 15%) on lactic acid yield was studied. Lactic acid was detected using High Performance Liquid Chromatography (HPLC). From the fermentation reaction result, for the solid waste sample, the highest lactic acid yield was obtained at 40C with 10% inoculum size. At this condition, lactic acid yield of 92.19 % have been obtained. Similarly, for liquid waste sample, the highest lactic acid yield was obtained at 40C with 10 % inoculum size too. However, the yield was only at 80.34%.
